Love the pistachio praline, it has just set me off on a sugar craving, and the only sweet thing in the house is cooking chocolate (the sacrifices that people with a sweet tooth must make!) Anyway, I too was surprised by how easy it was to make the puff pastry part of the recipe, and how FIDDLY the forming into vols au vent was - it really turned me off making them again... Although your Portuguese custard tarts look scrumptious, so they could warrant a further puff pastry excursion :-)</description>
