Thank you so much for this recipe. I’m gluten free and love fajitas. I adapted your tortilla recipe so that it was gluten free and tweaked the fajita marinade a bit as well. I also used caramelised onions instead. I gave a nice sweet contrast the the tangy/spicy marinade. those tortillas look pretty damn impressive, they puff up just like puff pastry and then go flat again. I should really give this a go, it looks super easy!

Hi Arwen – No, I haven’t tried freezing them, good idea. We had them heated up the day after and they were still good. I’ll let you know if/when I try freezing them.
